winemaking

100% carbonic maceration for 6 days using Yarra Pinot Noir from the clones 114 and 115 and then pressed to new puncheons for a further 6 days to complete primary ferment. The blend was then put together in tank where it went through 100% natural malo-lactic fermentation. Bottled in late June to lock in the fresh berry fruits.

nose

Classic strawberry & cream nose from the carbonic process. Lifted aromas of liqueur cherry and pomegranate. Whole bunch, stalky characters add spice notes, especially pink peppercorn. Flint and herbal notes appear as the wine opens in the glass.

palate

Full bodied with fruit sweetness but also has a savoury/ herbal edge. Soft, slippery and rustic with red berries, herbs and fine tannins on the finish. Great food Rose’.
